Hello everyone. I recently decided that I want to do more cooking posts on my site, mainly because I have started experimenting with food. I do love to cook, I would say that it’s something that I like to do in my downtime (i.e when I have downtime).
This past weekend I decided to try something different. I’m a huge fan of garlic flavored things and so I tried to incorporate that into my cooking, and I ended up making pasta with garlic and vegetables. Now we all know garlic tends to leave behind that awful garlic breath so I dint want garlic overload just something that would give the pasta a light garlic taste.
I used vegetables, tossed them with pasta and the sauce I made. Here is what I used;
Now you can use whatever you may prefer, but I used
- 5 Garlic cloves or powdered garlic
- 3 tbsp. Parsley
- 5 tbsp. Olive oil
- 2 tsp thyme
- 2 tsp oregano leaves
And Capellini pasta, of course!
What I did:
First things first I took the vegetables, placed them in a saucepan and put them to boil, till they became nice soft and tender
Next up I put the pasta to boil, adding salt and oil to the water.
For the sauce I blended 5 garlic cloves into a paste, then in a pan I popped in olive oil and the garlic paste, I let the garlic simmer in the oil for a minute and then added thyme, oregano leaves and parsley and let all the ingredients get absorbed in the oil, then added the pasta into the same pan and cooked it with the sauce, then I added the boiled vegetables in the pan as well and gave it a nice little spin so all the ingredients were incorporated in the sauce.
To finish off I added just a little bit of olive oil on top of the pasta and vegetables and sprinkled some parsley as well, and waaallaaah, you are done.
One delicious vegan garlic pasta coming right up!
This is a quick delicious recipe, you can use this as a main dish or you can use the pasta as a side to another dish, that is what I did. I used it as a side to the lamb leg I had roasted.
